Wet the coffee first with a splash of water and wait about thirty seconds. This is the bloom: the coffee swells, lets out gas and settles into an even layer. After that, the rest of the water soaks evenly through the coffee instead of finding a dry path down one side.
Then fill the phin, put the lid on and leave it. With a standard phin it takes four to five minutes. The lid matters: it keeps the heat in, and that heat is what makes the coffee brew evenly from the first drop to the last.
