The phin

A phin is a small metal drip filter that sits on top of your glass. It has four parts: a chamber for the coffee, a filter plate that rests on it, a lid, and a saucer to stand it on when you lift it off the glass. There is no pump and no paper. Gravity pulls the water through the coffee, with the filter plate on top as a loose weight. That is why it takes four or five minutes, and why the result is closer to a small, strong espresso than to filter coffee.
There are two kinds. On one, the filter plate rests loose on the coffee; on the other, you screw it down. A loose plate is more forgiving. A screw-down plate gives you more control, but also more ways to get it wrong. Either is fine.
