Sweetened condensed milk is the sugar and the milk at once. That is why you cannot swap it for evaporated milk, or for milk plus sugar. It became the standard during the French colonial period, when fresh milk went off quickly in the heat, and it stayed because it really suits the coffee.
It goes into the glass first, under the coffee, so the hot drips start to loosen it. Then you stir. If you forget, you get a sweet layer at the bottom and a bitter one on top. That is not a style, it is a mistake.
