A phin filter on a glass of black coffee, on a saucer with a spoon
How it works

A filter, a glass and a little patience.

  • Fill the phin

Two scoops of ground coffee, the filter plate on top and a splash of hot water to let the coffee bloom.
  • Let it drip

Water in, lid on. For four minutes, about one drop falls every second. You can see how long it takes, and start a timer if you like.
  • Finish your glass

Over ice, with sweetened condensed milk, salted cream or a cap of egg foam. Each recipe shows you how.
